In Monterrey, northern Mexico, KOLI embodies a gastronomic scene in full affirmation. Founded by two brothers—chef Rodrigo Rivera Río and sommelier Patricio Rivera Río—the restaurant tells the story of Nuevo León with contemporary precision, free of clichés. The evolving tasting menu rigorously explores the seasons through local products and masterful techniques, where modernity serves emotion.
