A meticulously curated cellar includes Pagodes de Cos 2016 and Cos d’Estournel 2009. “We have always seen Cos d’Estournel to be a wine of great elegance and depth,” underscores Irene Banet, a member of the wine team. “We find it is particularly harmonious with the lamb, whose rich flavors are perfectly supported by the structure of the wine, as well as with the game birds—currently in season—whose depth of flavor is highlighted by the complexity of the wine.” Dinner is served!
