La Réserve Ramatuelle: A Different Sense of Time
Just minutes from Saint-Tropez, La Réserve Ramatuelle moves to the rhythm of its own. Perched above the Mediterranean, the estate blends seamlessly into the surrounding garrigue, framed by pine trees, gardens and endless blue horizons. Here, away from the bustle of Saint-Tropez, the days unfold at their own pace: lunch by the pool, a restorative pause at the Nescens Spa, or an escape to Pampelonne and La Réserve à la Plage. A more discreet vision of the French Riviera, where the only urgency is to have none at all.
At La Voile, two-Michelin-starred Chef Éric Canino creates fresh, precise Mediterranean cuisine. For the past four years, crab has featured among his signature starters. Its delicate flesh, lifted by celery, Granny Smith apple and wood sorrel, finds a particularly harmonious pairing in Pagodes de Cos Blanc 2022, bringing together freshness, richness and tension. A subtle pairing selected by Lucas Fournage, Director of Sommellerie.
On the red side, his current favourites are Cos d’Estournel 2012 and 2014, two remarkably fresh vintages that are already showing beautifully.
“In the warmth of the Côte d’Azur, both wines pair perfectly with the freshness of Chef Canino’s cuisine.”
From the garrigue to the sea, everything here seems to invite summer to linger just a little longer.

Travers: The Energy of Marseille at the Table
Between the Vieux-Port and the lively streets at the heart of Marseille, « Place aux Huiles » embodies the spirit of the Phocaean city: vibrant, spontaneous and deeply Mediterranean. It is here that Travers cultivates the spirit of a neighbourhood bistro designed for lovers of fine ingredients and great wines.
The seasons set the pace, the flame defines the plates, and indulgence speaks for itself. Among the restaurant’s signatures, Simmental rib of beef reveals all its depth when kissed by the fire. In the cellar, great growths sit alongside more confidential estates, forming a selection that is as precise as it is generous.
Among them, Cos d’Estournel 2016 holds a special place. The Travers team’s choice reflects both the wine’s distinctive character and the precision of its pairing with flame-grilled cuisine :
“Cos d’Estournel holds a special place on our wine list because it embodies everything we look for in a great wine: elegance, depth and a strong sense of identity. A Second Growth of Saint-Estèphe, it stands out for its remarkable balance between power and finesse, offering an aromatic complexity that evolves beautifully over time. We are fortunate to currently offer the 2016 vintage, considered one of the greatest Bordeaux vintages of recent decades. The tannins are exceptionally fine, while the freshness brings remarkable tension and the long, persistent finish reveals exceptional depth. It is the perfect pairing for our flame-grilled, dry-aged Simmental rib of beef. Its notes of black fruit, spice and cedar, together with its silky texture, make it a wine that elevates the meal without ever overshadowing it. Beyond its prestige, Cos d’Estournel is, above all, a wine that inspires emotion. It tells the story of an exceptional terroir and undeniable savoir-faire and at TRAVERS, we love authenticity!”
A vibrant address, just like Marseille itself, where summer always seems to have a head start on the evening.

Six Senses Ibiza: The Island in All Its Grandeur
Away from the energy of Ibiza’s nightlife, the north of the island reveals another side: secluded coves, pine-scented hills and golden light shimmering across the Mediterranean. Perched above Xarraca Bay, Six Senses Ibiza celebrates the island way of life through a collection of restaurants and gathering places open to the sea.
Local, organic and seasonal produce lies at the heart of the experience, notably through Can Tanca, the property’s organic farm in Santa Gertrudis. Each table offers its own interpretation of the journey: Mediterranean and North African inspirations at Partal, Italian cuisine in the garden at The Orchard, and Latin American flavours accompanied by live music at The Beach Caves.
In this sun-drenched, cosmopolitan setting, Cos d’Estournel wines are equally at home alongside fine dining experiences and more spontaneous tastings. For Lucien Fabre, Wine Director at Six Senses Ibiza, their presence also resonates on a more personal level:
“To me, Château Cos d’Estournel embodies that rare balance between power, precision and refinement. Each wine expresses the identity of its Saint-Estèphe terroir with remarkable fidelity, while retaining the unique signature that has made the estate renowned. I particularly appreciate its aromatic depth, the silky texture of its tannins and the freshness that brings energy and length to the palate. Coming from Bordeaux myself, serving the wines of Cos d’Estournel holds a very special meaning for me. It is always a pleasure to share a part of my home region with our guests at Six Senses Ibiza, whether during a fine dining experience, a more adventurous food and wine pairing, or a moment of discovery in one of our different restaurants. Seeing these wines create emotions, spark conversations and accompany unforgettable moments is undoubtedly what moves me most. Cos d’Estournel is much more than a great wine: it is a link between my roots and the profession I am fortunate enough to practise every day.”
A different Ibiza hedonistic yet discreet where Cos d’Estournel finds its natural place by the Mediterranean.
