Reared on its mother\u2019s milk, the lamb of Pauillac is a Protected Geographical Indication known for its tender, fragrant meat. At Domaine de la Fosse, Caroline and Michel Arnould have been pursuing an age-old tradition since 2008. <\/span><\/p>\n<p><span style=\"font-size: 16px; color: #333333;\">Originally from Belgium, the couple arrived in France to create a grain farm before diversifying into animal breeding, and in so doing have indeed proved worthy of their excellent reputation. <\/span>[\/vc_column_text][\/vc_column][\/vc_row][vc_row css_animation=&#8221;fadeInDown&#8221;][vc_column][vc_single_image image=&#8221;23859&#8243; img_size=&#8221;800&#215;450&#8243; alignment=&#8221;center&#8221;][vc_custom_heading text=&#8221;Oysters and Prawns from Verdon&#8221; font_container=&#8221;tag:h5|font_size:16|text_align:left&#8221; use_theme_fonts=&#8221;yes&#8221; el_class=&#8221;pink-color&#8221;][vc_column_text]<span style=\"font-size: 16px; color: #333333;\">Jean-Marie Bertet\u2019s twelve hectares of marshland dedicated to oyster farming can be found at the very tip of the M\u00e9doc, between the Atlantic Ocean and the Gironde Estuary. Along with a handful of fellow aquaculturists, Jean-Marie has been a driving force in reintroducing oyster farming in the marshlands of the northern M\u00e9doc. <\/span><\/p>\n<p><span style=\"font-size: 16px; color: #333333;\">When tidal ranges reach their highest points, the water in the basins is renewed thanks to a system of locks, and innovative rafts maintain the bags of oysters in mid-water so the oysters have access to the best nutrients as they mature. <\/span><\/p>\n<p><span style=\"font-size: 16px; color: #333333;\">What is Jean-Marie\u2019s special technique?
